This Apple Butter Snack Cake is the perfect size for just a few people or a small gathering. We love it for brunch and an excellent way to enjoy apple butter in the Fall season

If you love super simple cakes made for a smaller gathering, you will want to try this Busy Day Cake. It’s one of our favorites.

❤️WHY WE LOVE THIS RECIPE

One of the main reasons we love this recipe is how moist it is, the apple butter really keeps this cake from drying out. It’s also made in an 8X8 which is so nice. This cake is also very versatile and you can add nuts or leave them out. We love the raisins but if you don’t skip them. We also don’t frost this cake but you can if you like. It’s a very good basic cake and the spices make it perfect for Fall or the holiday season.

🍴KEY INGREDIENTS

All-Purpose Flour – We have never made this with any other flour.

Brown Sugar – This give this cake a wonderful flavor!

Baking Soda – Be sure yours is fresh.. learn how here.

Apple Butter – We love apple butter and it’s delicious in this bread.

Raisins – We love the raisins in this recipe but you can leave them out.

Walnuts or Pecans – We have made this with both and they are both great.

Nutmeg – It goes great with the apple butter.

Butter – We have never tried making this with oil.

SWAPS

This snack cake is versatile and you can switch up the spices, add cinnamon, ginger, etc. You can also leave the nuts out if you like and use whatever nuts you prefer. The main ingredient that keeps this cake moist is the apple butter.

🍽️HOW TO MAKE

This is a simple recipe and takes nothing to prepare! You don’t even have to get the mixer out which is always a plus!

PREPARATIONS

Organize your ingredients to save you time and melt your butter.

Step 1
In a large bowl whisk together the flour, brown sugar, baking soda, salt and nutmeg. 

Step2
Stir in the melted butter with a spoon, then add apple butter, vanilla extract, egg, raisins and nuts to batter.

Step 3
Stir all together and spray a 8 x 8 baking dish with cooking spray.  Spread batter in dish and bake in preheated 350 degree oven for 35 to 40 minutes or until the center tests done.  Makes about 12 pieces of cake.

⭐TIP

We use unsalted butter in this cake since it has added salt. If you want to use salted butter you could leave the addition of salt out.

RECIPE VARIATIONS

You could easily add a frosting to this cake if you wanted. This Caramel Frosting would be delicious! You would need to 1/2 the recipe since this is a smaller cake.

Yes, it just will quick a little faster so check it around 30 minutes.

I don’t use a mixer when making this cake and it turns out fine. You could use a mixer if you want but I like that it is so easy to mix up with a spoon.
