❤️WHY WE LOVE THESE BISCUITS

These blueberry biscuits are perfect for any occasion and the sweetness of the blueberries plus the powdered sugar glaze is wonderful. These can almost be served as a dessert option and are perfect for brunch.

🍴KEY INGREDIENTS

  • all-purpose flour
  • baking powder
  • sugar
  • butter 
  • buttermilk
  • egg
  • fresh blueberries (could use frozen)
  • Glaze: powdered sugar and milk

SWAPS

You can use regular whole milk if you don’t have buttermilk. You can also make a buttermilk substitute if you like. We like to make our biscuits with buttermilk and one reason why is the fat content in the milk.

🍽️HOW TO MAKE

You only need one bowl to mix everything in, which is always a plus!

COOKING STEPS

Step 1
Mix flour, baking powder and sugar together with a whisk. Cut in butter in pieces. 

Step 2
Beat egg and milk together in a separate bowl.  Add to dry ingredients and mix with a spoon.  Fold in blueberries.

Step 3
Turn out onto a floured surface and pat to about 1/2 inch thick with your hands. Cut out with a biscuit cutter.   Place on a sprayed baking sheet with biscuits touching.  Bake in preheated 425-degree oven for 15 to 20 minutes until biscuits are brown on top. Add glaze.

⭐TIP

Knead biscuit dough as little as possible and get as many biscuits as possible from the first cutting. Biscuit dough should have some wetness.

Why do my biscuits come out hard?

If they are hard you over baked them or over worked the dough. Biscuits should be a little wet before going in the oven.

My dough was too wet, can I add more dough?

Yes! All flour is different so if you can’t get the dough manageable then definitely add more a little at a time.

STORING AND REHEATING

We store these in a air-tight container and reheat them for about 10 seconds in the microwave.

SERVING SIZE

This recipe makes about 12 biscuits depending on the size you cut the biscuits out. So if 2 biscuits is a serving it makes about 6 servings.

Topping for Biscuits

  • 1 cup powdered sugar
  • 4 or 5 tablespoon milk

  • Add to dry ingredients and mix with a spoon. Fold in blueberries. Turn out onto a floured surface and pat to about 1/2 inch thick with your hands

We like these biscuits either with butter and honey or with a powdered sugar glaze.
