I made this ice cream a couple of different times in an attempt to get both the flavor and the texture I wanted. Let me just admit that the first attempt barely hit the “edible” mark.

I’m happy to tell you that the final version of this recipe is a solid two-thumbs-up! It is bright and flavorful ice cream with hints of fruity pebbles flavor in the creamy refreshing ice cream.

These are my favorite inexpensive containers for storing ice cream. They’re perfect for gifting (who doesn’t love homemade ice cream?) storage, re-using, etc. I write the flavors on the lids with a sharpie and it washes off with dish soap.

Fruity Pebbles Ice Cream Recipe

You’ll need the following ingredients to make this recipe:

  • Fruity Pebbles cereal
  • whole milk
  • heavy cream
  • fresh lemon juice
  • sugar
  • vanilla extract
  • kosher salt

To start, add the cereal and the milk to a bowl and let it sit for 30 minutes. Then, place a fine mesh strainer over a large mixing bowl and pour the cereal mixture through it into the bowl. Discard the soggy cereal from the strainer.

Add the cream, lemon juice, sugar, vanilla, and salt to the cereal milk. Whisk to combine and then pour into the ice cream maker. Churn according to the manufacturer’s instructions.

Serve immediately for soft serve ice cream or transfer the mix to an airtight container and store in the freezer for several hours or until ready to serve. Top each serving with a handful of Fruity Pebbles when serving for extra crunch.
