❤️WHY WE LOVE THIS PUMPKIN RECIPE

If you have followed our site for any amount of time, you know we are a big fan of pumpkin recipes and we love cobblers, so it only makes sense we share a pumpkin cobbler. This cobbler makes a sauce on the bottom that is absolutely delicious. We love it topped with ice cream and then we add a little caramel sauce!

This pumpkin cobbler is rich in flavor but not so much that it’s a super sweet dessert. If you don’t have ice cream just top it with whipped cream. This dessert is perfect for the Fall season and would be great for any holiday gathering.

🍴KEY INGREDIENTS

All-purpose flour – We have never made this with any other flour.

Baking powder – This a necessary ingredient, you can test to make sure your’s is fresh buy these instructions.

White granulated sugar – give this the sweetness you love!

Ground cinnamon – we love cinnamon and it’s great in this dessert.

Ground nutmeg – another fantastic spice.

Ground ginger – goes with cinnamon and nutmeg!

100% pumpkin – don’t confuse this with the pumpkin pie MIX. You want 100% pumpkin.

Oil – we use olive

Vanilla extract – gives that great flavor but you can switch this up if you wanted to.

Evaporated milk or regular milk

Topping ingredients – brown sugar, cinnamon, pecans, and boiling water

Ice cream or whipped topping – it’s really great with both

Caramel Sauce – optional and we don’t always use it, but it was a great addition this last time we made it.

SWAPS

You can switch out the spices if you need to and use regular milk instead of evaporated milk. Cobblers are versatile but this is how we love to make this one. The Caramel sauce is optional and you can make your own by using this recipe

🍽️HOW TO MAKE

This recipe is made with simple ingredients, but once they are all put into this great dish they are amazing.

PREPARATIONS

You will need boiling water, so go ahead and get that started on the stove while you put the rest of the ingredients together.

COOKING STEPS

Step 1
Preheat oven to 350 degrees. Whisk together the flour, sugar, baking powder, salt and spices. 

Step 2
Stir in oil, pumpkin, vanilla extract and milk with a spoon. 

Step 3
Spray a 7 1/2 x 11 baking dish (or 2 quart baking dish) with cooking spray and spread the mixture into the dish.  The mixture will be thick. Make topping below and sprinkle over this mixture.

Step 4: The Topping
Whisk together brown sugar and ground cinnamon and spread over pumpkin mixture.  Sprinkle on nuts. Pour boiling water over all and do not mix.

Step 5
Bake in preheated 350 degree oven for 40 to 45 minutes just until top is cooked.  Bottom will be a sauce. Makes one cobbler or about 8 large servings.

⭐TIP

Please remember this is 100% pumpkin and not the pumpkin pie mix! They are right next to each other in the grocery so it’s easy to make a mistake.

RECIPE VARIATIONS

You could easily switch up the spices and the nuts in this dish. If you love walnuts, use walnuts, but we love pecans and pumpkin together.

No, there are no eggs in this recipe.

Can this be made in a 9X13?

If you plan to double it a 9X13 would work fine, but as written it’s not going to be very thick if you make it in a 9X13.

Can I make this in advance?

I believe this dish is best fresh but it does reheat okay.

STORING AND REHEATING

We just store this in an air-tight container and heat up individual pieces in the microwave. It’s a great dessert that never lasts long!
